Job Summary:
Are you passionate about classic Italian cuisine? Join our team as the Head Chef of our Trattoria Restaurant in Malta. In this role, you'll oversee the daily operations of the kitchen, ensuring the delivery of high-quality dishes in a simple and comfortable setting.
Responsibilities:
- Lead and manage the kitchen operations
- Supervise a team of 5 chefs
- Handle shift scheduling and rota management
- Maintain stock levels, oversee ordering, and ensure quality control
- Manage budget, control costs, and optimize margins
- Recruit and train kitchen staff
- Ensure compliance with food safety, hygiene, and security regulations
Personnel Requirements:
- Previous experience as Chef de Cuisine/Head Chef
- Proficiency in classic Italian cuisine, preferably in a trattoria-style setting
- Culinary training/diploma
- Certification in HACCP standards and food hygiene
- Passion for the culinary arts
- Strong negotiation skills and supplier relationship management
- Experience in mentoring and working with a dynamic team
- Positive and motivated attitude
- Proficient in English
